Just a couple more days and the kids will be home all day, every day, for two whole months!
Do you plan your summer out in advance, or will you be winging it and letting the wind set your sails?
I’m a wing it kinda mom for the most part, once school is over. The rest of they year is so planned out, that I really look forward to the unstructured time of summer. It’s refreshing and necessary after so many months of alarm clocks, lunch bags, homework, etc etc…
Bike rides and picnics have been some of our favourite ways to pass the time together…but alas, the girls are growing up…and I fear “taxi driver mom” is who I will be this year.
Enjoy your little ones my friends, those are precious times that are over much too soon…
These delicious banana bread muffins are easy to pack up and take along on your adventures, not to mention the perfect way to use up those bananas that seem to overripen so fast in these hot summer months.
Make a batch or two and once cooled, wrap them individually with saran wrap to keep them super fresh for several days.
*If nut allergies are a concern, you can easily omit the pecans topping and use only the cinnamon sugar.

BANANA BREAD MUFFINS WITH PECANS

*makes 12 muffins
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/4 tsp ground cinnamon
3 very ripe bananas
1/2 cup brown sugar
1/4 cup vegetable oil
1/2 cup chopped pecans
1 tsp cinnamon + 2 tsps sugar for topping
Preheat oven to 350F.
Add flour, baking powder, baking soda, salt and cinnamon to a small bowl and stir with a fork to mix well.
In a medium bowl mash peeled bananas with a fork, then add egg and stir to mix.
Add sugar and oil and stir together until well combined.
Add flour mixture to banana mixture and combine well with fork.
Lightly butter a muffin tin.
Divide batter evenly to make 12 muffins, then top each with chopped pecans.
Mix cinnamon and sugar together in a small cup, then sift over muffin batter.
Bake for about 23-25 minutes.
Remove from oven, cool 10 minutes and enjoy.
