If you love olives, this recipe is for you!

It’s an excellent and versatile pate/spread that you can make in advance and store in your fridge, ready to go.

Having it on hand means you can quickly put together an excellent appetizer plate for unexpected guests. Simply serve it with some crackers or toasted baguette slices, and a goat cheese log, or cream cheese.

Easy, fast and so tasty.

*this is my own version of the standard olive tapenade

*makes about 1 cup


1 1/2 cups pitted black olives
2 tbsp chopped fresh parsley
1 clove garlic, chopped
1 tsp balsamic vinegar
1 tbsp lemon juice
3-4 tbsp olive oil
1/8 to 1/4 tsp salt

To a small food processor bowl, add all ingredients except olive oil and salt, and process for a few seconds to finely chop and combine everything.

Add oil and process a few more seconds to blend well.

Taste and add salt as desired. (this will vary depending on the olives you use, as some are much saltier than others)

Transfer to a sealable jar and refrigerate until needed.

Use as a sandwich spread. It tastes delicious on a cold cut or veggie sandwich.

Use it as an appetizer spread. Served along toasted baguette slices topped with goat cheese (as in photos) it is amazing!

Add a tbsp to your tomato or meat sauce as it is cooking, to add great flavour to your pasta dishes, or wherever you are using your sauce.
