I found this recipe in the Walmart Live Better magazine a couple of years ago. It caught my attention because I knew I had granola sitting around that, for whatever reason was not being eaten by the family. It needed to be used up stat and this was the perfect solution!

When I finally got around to making it…the unpopular granola was mysteriously gone…hmm funny how that happens, like all the time…and the recipe was filed away…until yesterday, when I came across it (I am on a bit of a summer clean up/clear out run presently)

This time I was determined to give them a go, and this morning I got it done!

The results are in…these cookies are darn good!

Really, really darn good!

Think granola bar flavours with a cookie texture…what’s not to love!

I followed the recipe pretty closely, but I did use less cinnamon and granola than the original amounts called for. Also, keep in mind that the type of granola you choose to use will alter the flavour of these cookies, but I think most varieties will work very well.

My favourite granola mix these days is a store mix from Longos called Maple Almond. So good!

Here is the recipe as I made it.

Give it a try, I will be making these cookies again…and again.

CHEWY GRANOLA COOKIES

Cookies/ SGTastes

*makes about 18-24 cookies

Ingredients:

1/2 cup non-hydrogenated margarine
1/3 cup brown sugar
1/4 cup white sugar
1 tsp pure vanilla extract
2/3 cup all purpose flour
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 3/4 cups Longos Maple Almond Granola

Directions:

Preheat oven to 350F.

Line a baking sheet with parchment paper.

Using an electric mixer, mix together margarine and both sugars until creamy and smooth.

Add vanilla and mix 1 more minute.

In a bowl stir together flour, baking soda, salt and cinnamon.

Add to mixer bowl and blend until well incorporated.

Add granola and mix on low until combined.

Drop by spoonfuls on baking sheet.

Bake for 12-14 minutes.

Cool 2 minutes on sheet then transfer to cooling rack.

Enjoy…and do try not to eat them all at once…
