It was a gorgeous and sunny fall day last sunday, so we decided to go apple picking. It’s something we enjoy and look forward to doing together as a family. I checked the website of the closest orchard and they were still advertising “open for u-pick all day” so off we went.
We walked up to the kiosk at the entrance, to get our basket for picking, and were promptly advised that there were no more apples on the trees.
We stood there for several seconds, in total disbelief…
“No apples at all? What about over there?” I asked as I pointed to some families walking through the orchard.
“Nope, nothing there either, but we do have baskets for sale in the store” the attendant said matter-of-factly.
Uh no! That will not do…we came to pick apples, not to buy them off the shelf like we usually do!
Did I mention the place was packed? People checking out the pumpkins for sale (there were many!), kids playing in the playground…but no one carrying a freshly picked bag of apples!
Frankly, it was a sad sight.
The little store was jam-packed, as we all turned to shopping, faced with nothing else to do and, I suppose, to justify the drive out.
I am sure they made a killing that day!
I bought a few pounds of Mutzu apples. They are our favourites, and not easily found in the supermarkets. They are huge and truly delicious!
But in the end it was a disappointing day to say the least. My dreams of filling the freezer with apple pies, crumbles and other homemade delights, to enjoy this winter…gone!
I did manage to squeeze out one cake recipe, before all the apples were eaten. An old standby, that never disappoints. Here you go, enjoy!
This delicious apple cake, is my go-to favourite when I am craving quick, home-made baking. It’s a simple recipe, easy to make, uses basic ingredients that we all have on hand, and delivers big on taste. It’s moist, sweet and lightly spiced. A perfect snacking cake with your tea or coffee. Slice it up and enjoy.
It doesn’t even need a fork…just the willpower to stop after one slice.

1 1/2 cups flour
1/2 tsp baking soda
1/8 tsp salt
1/4 tsp cinnamon
1/4 tsp ground nutmeg
3 large eggs
1/2 cup white sugar
1/2 cup brown sugar, lightly packed
1 tsp pure vanilla extract
1/2 cup butter, melted and cooled
2 medium to large apples, any variety
2 tsps fresh lemon juice
Icing Sugar for dusting
-preheat oven to 350F
-grease a bundt pan or other round cake pan
-in a medium bowl stir together flour, baking soda, salt, cinnamon and nutmeg, set aside
-crack open the eggs into a large bowl
-add both sugars, vanilla and melted butter and whisk together until smooth
-add flour mixture and stir until well combined
-core, peel and chop apples and place in a bowl
-pour lemon juice over the apples and stir to coat
-add apples to cake batter and gently stir to combine
-pour and spread batter into cake pan
-bake for 35-40 min, or until toothpick inserted in centre comes out clean ( do not be alarmed about your cake not rising to fill bundt pan, this is a rather small cake)
-cool in pan, on wire rack for 20 minutes, then turn out onto rack
-don’t wait…enjoy it now, while it’s still warm, dusted with
icing sugar…yum yum
