Fresh Spinach Dip

*makes about 1 1/2 cups and serves 6 or more



1 cup fresh raw spinach

2 cloves garlic, peeled and quartered

3/4cup sour cream

1/2 cup mayonnaise

1 tsp dried tarragon

salt and pepper to taste





-wash and dry spinach leaves

-add all ingredients to food processor bowl and process until smooth and creamy

-refrigerate for 1/2 hour to allow flavour to meld

-serve with a sliced french stick,  cubed pumpernickel bread, pita chips or fresh veggies

*will keep in fridge for several days
