Strawberries are so good right now….I can’t get enough of them!
One of my new favourite things to make with fresh ripe strawberries is this delicious juice.
It’s sweet and refreshing and simply delicious!
I had clipped several, and very different recipes for strawberry lemonade some years ago, and finally got around to giving the idea a try. After some testing I came up with this version, which highlights the fresh flavours of the strawberries and has enough citrus juice to balance out the sweetness, but not quite enough to make it a lemonade.
This juice would make great drink for an afternoon get-together with a light dessert, or perhaps a kids party or even a picnic in the park.
FRESH STRAWBERRY CITRUS JUICE
*makes about 4 cups, serves 4-6
1 and 1/2 cups chopped ripe strawberries
2-3 tbsps sugar, depending on how sweet strawberries are
Juice of 1 large lemon
Juice of 1 large lime
3 1/2 cups water
To a blender pitcher add strawberries, sugar and citrus juices plus 1/2 cup water and blend until almost smooth.
Pour mixture into a pitcher, add remaining 3 cups water and stir well to combine.
Refrigerate 15 minutes to allow flavours to meld then stir and serve.
Tip *you will need to adjust sugar according to sweetness of strawberries and how sweet or tart you want this juice to be, every time I make this I seem to use a slightly different amount as strawberries at their peak of ripeness are very different tasting from those available year round
