Banana bread…sweet, simple and satisfying…
There’s no shortage of recipes to be had out there for this popular loaf bread.
In fact, if I was new at baking and looking for a good one, it would be pretty hard to choose which one to try out.
Well search no more my friend…because today’s recipe is delicious and sure to become a trusty favourite!
I have baked many, many banana breads over the years and I love experimenting…
tried adding in new ingredients…
tried leaving out old ingredients…
debated on adding nuts or leaving them out…
Some were quite delicious, others not so much, but what I realized is that, at the end of the day, there is nothing quite as satisfying as a simple, old fashioned slice of banana bread…
This recipe, created by me, is the one I now call our family favourite.

MY FAVOURITE BANANA BREAD
*makes 1 loaf
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup vegetable oil (or melted unsalted butter)
1 tsp pure vanilla extract
2-3 very ripe, large bananas, mashed
1/3 cup greek yogurt, vanilla, plain or coconut
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
Preheat oven to 350F.
Grease bottom only of a standard size loaf pan.
Add sugars and oil to a mixing bowl and beat with a whisk until well combined.
Add eggs, vanilla, bananans and yogurt, mix together well.
Add remaining ingredients and mix just until combined. Do not over mix.
Pour batter into a loaf pan, sprinkle top with some extra white or brown sugar (I like to use the granular demerara sugar for toppings) and bake for 50-55 min.
Cool on wire rack for 10 min, remove from pan and cool 15 minutes more before slicing.
