Banana bread…sweet, simple and satisfying…
There’s no shortage of recipes to be had out there for this popular loaf bread. In fact if I was new at baking and looking for a good one, it would be pretty hard to choose which one to try out.
Well search no more my friend…because today’s recipe is delicious and sure to become a trusty favourite!
I have made many, many, many loaves over the years, I love experimenting,
tried adding in new ingredients…
tried leaving out old ingredients…
Some were definitely great, others not so much, but at the end of the day there’s nothing like a simple, old fashioned slice of moist and delicious banana bread…
This recipe, my personal recipe, is the one I now call our family favourite.
Give it a try and let me know what you think.
MY FAVOURITE BANANA BREAD
*makes 1 loaf
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup vegetable oil
1/2 tsp vanilla (1 tsp if using plain yogurt)
2 very ripe large bananas, mashed
1/3 cup greek yogurt, vanilla or plain
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
Preheat oven to 350F.
Grease bottom only of a standard size loaf pan.
Add sugars and oil to a mixer bowl and beat until well combined (whisking by hand works well too).
Add eggs, vanilla, bananans and yogurt, mix together well.
Add remaining ingredients and mix just until combined. Do not over mix.
Pour batter into a loaf pan, sprinkle top with a bit of white or brown sugar and bake for 50-55 min.
Cool on wire rack for 10 min, remove from pan and cool 15 minutes more before slicing.
