Monday, monday…why must you torture me with unfinished business!
Dirty laundry, unwashed dishes, unfinished projects…
I’m not usually this unorganized, but thanks to a lovely Mothers Day weekend I have fallen way behind.
Truth is, I am ok with it…blessed to have my mom, my children and family to celebrate with.
Everything else can wait!
Today I’m sharing a dinner idea for days when simple, easy but tasty is in order.
This delicious pasta casserole is just a different way to serve up Spaghetti and Meatballs.

PASTA AND MEATBALLS CASSEROLE
1 cup shredded mozzarella cheese
1/2 cup shredded asiago or parmesan cheese
1/2 of a 900g pkg rotini or small penne pasta
2 tbsp butter
3 1/2 cups cooked tomato sauce (I like to make my own but a store bought jars work well too)
1 box/bag frozen meatballs (about 24-30)
Mix two cheeses together in a small bowl. Set aside.
Cook pasta as per package instructions in a large pot. Drain, return to pot and toss with butter. Cover and set aside.
Cook meatballs as per package directions. Add to pasta pot, stir together and set aside.
Heat tomato sauce. Spread a ladle full of sauce into a large casserole baking dish.
Add remaining sauce and half of the cheese to pasta pot and stir until well combined.Transfer to casserole dish and spread evenly.
Top with remaining cheese, cover with foil and bake at 375F for 15 min.
Remove foil, and bake 10 more, until cheese is bubbly.
Remove from oven, cool 5 minutes. Spoon into pasta bowls and enjoy with a side salad and some garlic bread.
Dinner is served. Enjoy
