Pecan Shortbread Cookies

Today I give you…a favourite recipe from my Christmas cookie baking file.

A classic shortbread recipe, turned into these little bites of melt-in-your-mouth goodness.

Give them a try. They are delicious!

I dare you to have just one!


makes about 40-45 cookies

1 cup butter
1/3 cup sugar
2 cups flour
1 cup finely chopped pecans
2 tsp pure vanilla extract
1 tbsp sugar + 1/2 tsp cinnamon mixed together on a plate


Preheat oven to 375F.

Grease cookies sheets.

Cream together butter and sugar with a mixer.

Add flour, pecans and vanilla and mix until well combined.

Scoop out a teaspoon of dough, roll lightly in your hands to form a ball and place on cookie sheet.

Repeat with remainder of dough, spacing balls about 1″ apart.

Optional step: press tops down slightly with a fork for a flatter cookie (or leave as is for round cookie balls)

Bake for 10-13 min.

Immediately roll each cookie into sugar and cinnamon mixture, then transfer to wire rack to cool.

Store in an airtight container or in the freezer.

*these cookies store and travel very well, perfect for a cookie box or tray for the holiday season
