I blame Pinterest!

It is not a “diet” friendly place…so many goodies…

Well it’s true!

But in defence of Pinterest, I have found some amazing recipes, ideas, and tips since I joined few years ago. I highly recommend you check it out if you are not on it. ( and no, nobody is paying me to say that)

This recipe is one that my family asks for again and again. I found it while on the hunt for…something entirely different I’m sure! Thats how it goes on Pinterest. Lol.

Of course, as it often happens, I didn’t have all the ingredients required (does anyone? ever?). I substituted with what I had on hand and came up with a slightly different but just as delicious version! I tweaked the recipe a bit more after making it a few times because we all agreed we wanted more peanuts!

These bars are very easy to make, they take about 10 minutes to put together plus 15-20 minutes in the freezer to harden up.

Be warned…these darn things are divine…and addictive.



1 bag (225g/12oz) white chocolate chips
1/2 cup peanut butter
1/2 cup unsalted butter, cut into a few pieces
1/2 teaspoon pure vanilla extract
2 1/2 cups miniature marshmallows
1 cup salted peanuts



Line a 9×9 inch square baking pan with aluminum foil.

Add white chocolate chips, peanut butter and butter pieces to a large microwave safe bowl and microwave on 50% power for about 3 minutes.

Stir with a spoon and microwave for another minute on 50% power. Stir well until well combined.


Add vanilla, just 2 cups of the marshmallows and just 3/4 cup of the peanuts and stir to coat well.


Pour the mixture out into the prepared pan and spread out well with a spatula.

Sprinkle remaining marshmallows and peanuts evenly over the top and press into mixture lightly with the spatula.

Chill in freezer for about 15-20 minutes until set.


Remove from pan with tin foil.

Cut into 16 squares, then cut each square in half.

Keep refrigerated until ready to eat.
