Just a quick post today to share with you this super tasty smoothie we often make for breakfast or an afternoon snack.
The combination of fruits in this just works!
And the end result is a delicious smoothie with a bit of a tropical vibe…
makes me think of the beach…
makes me happy.

STRAWBERRY COCONUT & PINEAPPLE SMOOTHIE
*makes 1 smoothie
1/2 cup sliced, fresh strawberries (ok to sub with frozen)
A few chunks frozen banana
A few chunks frozen pineapple
1 small container coconut greek yogurt
1/2 cup or more coconut milk (ok to sub with regular milk)
1 tsp unsweetened coconut flakes
Optional: 1 tsp ground flax, chia seeds or oats
Add all ingredients to your smoothie blender cup.
Process until smooth, stopping to stir when needed, and adding more milk to your desired consistency.
Enjoy it for breakfast or as an afternoon snack.
