Memories of a Valentine’s Day dinner, many years ago, at one of my favourite restaurants, Il Fornello…
We shared a Roma salad and it was amazing!
I fell in love…with the salad…with the restaurant…and the boy?
Well, it was fun while it lasted…
But, it did inspire me to recreate that delicious salad at home, and I have been making it ever since.
This salad is so easy to put together, but it’s fancy enough for a special occasion, like Valentine’s Day, or dinner guests.
Actually, I make this salad as a lunch dish for myself quite often.
It’s so good, I feel like I’m treating myself!
I just love the colours of this dish, don’t you?
Almost as much as the flavours…goat cheese, roasted peppers, walnuts…how can it be anything but divine!

That’s Amore Salad
*serves 2 persons as a side or 1 person as a meal
(easy to double)
1/4 cup chopped walnuts
2 large handfuls mixed salad greens (italian or spring mix)
1/2 of a Roasted red pepper, very thinly sliced
1/4 cup crumbled Goat cheese
1 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp balsamic vinegar
1/8 tsp salt
Dash of pepper
1 small clove garlic, minced
-preheat oven to 400F
-place walnuts on a small baking sheet and toast them for 3-5 min, being careful not to burn them
-remove from oven and set aside
-to a large salad bowl add salad greens
-top with peppers, goat cheese and walnuts
-in a small bowl make dressing: whisk together olive oil, lemon juice, vinegar, salt, pepper and garlic until well combined
-just before serving, drizzle dressing over salad and toss very gently
-serve and enjoy every bite!
