Margarita Grilled Tilapia With Lime Mayo

Hands up if you love margaritas!

I do, I do!

But for me, it’s not so much about the tequila but rather the great citrus flavours that make it a favourite…although let’s be honest, the tequila does add a little something something doesn’t it!

I have found and tried several recipes in the past that are inspired by that popular cocktail, both savoury and sweet, and I have yet to be dissappointed by the results.

It’s a combination of flavours that just works!

Today’s recipe caught my eye for those reasons. This is my adaptation of the Margarita Grilled Fish recipe from the Ricardo Cuisine website.

I first saw Ricardo on the tv show Cityline years ago, and I have to tell you that initially it was his french canadian charm that turned me into a fan. But then I tried some of the recipes and discovered they are easy, family friendly and flavourful, with excellent turnouts.

This one is a great recipe for the summer BBQ season, and on the barbie is how I would normally have cooked the fish. Unfortunately I ran into technical difficulties and had to pull out my George Foreman Grill at the last minute.

It turned out beautifully!

This dish was delicious!

Tilapia is not a fish I choose often but in this recipe it works well, nice mild citrus flavours with just a hint of tequila. And since I have to have mayonnaise with my fish, I made some lime mayo to go with it and it was perfection.

I will be making this one again!

MARGARITA GRILLED TILAPIA WITH LIME MAYO

STEP 1 – MAKE MARINADE

MARGARITA GRILLED TILAPIA WITH LIME MAYO

*serves 2

Ingredients:

1/4 cup orange juice
Zest of 1 lime
Zest of 1 lemon
Juice of 1 lime
2 tbsp olive oil
1/8 tsp salt
Dash of freshly ground pepper
2 tilapia fillets (about 300g)

For lime mayo:

2 tbsp mayonnaise
Zest of 1/2 lime
1 tsp lime juice

Directions:

Make the marinade by combining all ingredients, except tilapia fillets, in a sealable dish.

Add the fillets, turning to coat well with marinade. Cover.

Refrigerate for 2 hours to allow the marinade to work its magic.

In the meantime make the lime mayo by stirring together in a small bowl the mayonnaise, lime zest and juice. Refrigerate until needed.

Brush the grill with a bit of oil and preheat it on high.

Place tilapia on the grill, turn heat down to med-high and cook about 3 min on each side.

Transfer to plates, top with a pinch of salt and the lime mayo, add your veggies and serve.
